Let Us Eat Pig!

116 Crown is at it again and this time they are wowing diners by offering different cuts of pork for the next several months from a custom, acorn-fed pig.

 

Acorns aren’t just for squirrels. 116 Crown, is participating with La Quercia Artisan Cured Meats in a program called Acorn Edition and have purchased a whole organic, acorn finished Berkshire pig.

In December, the pig stopped enjoying a hearty diet of acorns and now we can start enjoying the pig.

116 will receive various cuts of meat to be crafted into delectable meals or offered up in its pure state. 

Diners can look forward to ribs and fresh sausage first, followed by cured products like Guanciale and Pancetta in late Febrary. In April, the Lonza, Coppa and Lardo will arrive. By September, feast on the first shoulder and leg. A finally, in July 2011, the crowning glory, the Proscuitto, arrives.
